Mexican Night! My family LOVES these enchiladas, I make them quite often. They are so easy to make. I also make chicken enchiladas, they are just as delicious. Sometimes I make these ahead of time, don't put the sauce on them, and they can sit in the fridge until you bake them.
Enchiladas (beef)
8 Medium Tortilla Shells
1lb Ground Beef
1 Can Refried Beans
1 Can Red Enchilada Sauce
1/2 Onion, diced
1/2 Orange or Yellow Pepper, diced
1 Packet Taco Seasoning
1 Can Corn, drained
8oz Cheddar cheese
Brown ground beef, add onion and pepper, cook till soft. Add taco seasoning, refried beans, and corn. Add 1/4 to 2/3 cup of enchilada sauce. Add 3/4 Cup cheese. Mix together. Put meat mixture into shells. Lay in 9x13 pan (sprayed with non stick spray). When ready to bake spread the remaining enchilada sauce over top and sprinkle cheese over the top. Bake 375 degrees for 30 minutes.
