This is an old recipe! My Mom use to make this for us when we were kids, we loved it then and it's just as good now. I made it a few months ago (before the blog), the original recipe calls for raw onion, but Brayden wasn't a huge fan. Now, if you asked my Mom she would say the raw onion is what makes it :) Tonight I sauteed my onions for like 5 minutes, not long at all, just enough to change the texture and flavor. So you choose which you would like to do, but if you have kids that don't like onions, I highly recommend sauteing them first (not for long, just 5 minutes or so). This only takes minutes to throw together!
Corned Beef Casserole
8oz pkg. wide noodles
12oz Corned Beef
1/4lb. American Cheese, diced
1/2 Cup Chopped Onion (raw or sauteed)
1 Can Cream of Celery Soup
1 Cup Milk
1 sm Sour Cream
3/4 Cup Buttered Crumbs (Ritz, moistened with butter)
Combine cooked noodles, corned beef, cheese, onion, soup, and milk. Mix well. Fold in Sour Cream. Put in 9x13 baking dish (use non stick cooking spray). Top with buttered crumbs. Bake 350 degrees for 45 minutes.

DeleteSuch a great recipe! Instead of american cheese I used shredded swiss cheese. I have made this for about 30 years and my older kids still love it.
