Chicken Garlic/Pesto Pizza!

Ahh! I feel like it's been SO long since my last recipe post.  I was just coming up with something really good :)  We are currently in the process of finishing our basement and we also have everyone coming to stay with us for the week of Thanksgiving, so it's been a bit hectic.  One night we had egg sandwiches for dinner and then last night we went to RED ROBIN :)  But don't worry I am getting back in the grove, and have some really good recipes coming this week.  I have been wanting to make a Chicken/Garlic/Pesto Pizza, so I gave it a try tonight! It was delicious and SO EASY!

Chicken Garlic/Pesto Pizza

1 1/2 pds. Chicken Breasts (cooked and shredded)
1 Bag of White Cheese (Monterrey jack, Parmesan, mozzarella, or a blend of Italian cheeses)
Italian Herb and Cheese Cooking Creme
Pesto and Basil spread
2 thin pizza crusts (already made, usually hanging in the pasta isle)
1 bulb of Garlic (Roasted)
1/2 Onion Cut in thin pieces

First of all you need to roast the garlic:  http://www.howtoroastgarlic.net/

You also need to cook your chicken:  You can cook it however you would like, I used my pressure cooker (love that thing) then it shreds nicely.

Set your 2 pizza crusts on pizza pans, or cookie sheets if that's all you've got.  Drizzle a little Olive Oil on the crust and rub it around.  Spread the Italian Herb and Cheese cooking creme and the pesto with basil over the crust, apply a good amount, you don't want it to be dry!  Next spread your shredded chicken and onion over the entire crust.  Now drop chunks of garlic on top.  Top with cheese.  Bake for 14-16 minutes at 425 degrees.
