Chicken Pot Pie

This is the perfect meal for a wintery day.  Chicken pot pie is SO simple to make.  I always make this ahead of time (during naptime) that way when it's time to eat you just have to pop it in the oven, and dinner is done!

Chicken Pot Pie

1lb of Chicken (cubed and cooked)
1/2 tsp Thyme
2 Can Cream of Potato
1 Can Mixed Vegetables
1 Can Peas
2 refrigerated Pie Shells

Cut up chicken and cook in skillet.  Add Thyme.  Add Cream of potato, mixed vegetables, and peas.  Mix together. Unroll one shell and put in the bottom of a pie dish.  Add Chicken/Vegetable Mixture.  Unroll the other pie shell on top of Chicken/Vegetable mixture.  Seal edges and cut slit in the middle of the shell.  Bake on 425 degrees for 40-45 minutes.
