Creamy Rice Pudding

This is one of my husbands favorite things!  His Mother use to always make Rice Pudding for him when he wasn't feeling well.  Tonight Brayden had asked for me to make him some so I couldn't resist.  It's so easy to make.  He asked me as 7 and he was eating it by 8, if that tells you how easy it is :)  This is a very good recipe.  If you have never made Rice Pudding, I highly encourage you to try this one out, you won't be disappointed.

Creamy Rice Pudding

3/4 Cup uncooked white rice
2 Cups Milk, divided
1/4 Cup White Sugar
1/4 tsp Salt
1 Egg, beaten
1 Tbsp Butter
1/2 tsp Vanilla Extract

In a medium saucepan, bring 1 1/2 cups water to a boil.  Add rice and stir.  Reduce heat, cover and simmer for 20 minutes.
In another saucepan, combine 1 1/2 cups cooked rice, 1 1/2 cups milk, sugar and salt.  Cook over medium heat until thick and creamy, 15-20 minutes.  Stir in remaining milk 1/2 cup and beaten egg.  Cook 2 minutes more, stirring constantly.  Remove from heat, and stir in butter and vanilla.  Serve warm.
