Oatmeal Brownies

One of my favorite desserts! I love these Oatmeal brownies, they are the perfect blend of chocolate and oatmeal.  I don't feel 100% guilty eating the whole pan since there is oatmeal in it. haha.  If you have to bring dessert somewhere that you need to feed a lot of people, this makes a ton!  I made these yesterday and brought goodie bags to a few of our neighbors.  And of course after the kids went to bed I warmed one up with a nice glass of milk :)  Mmm they are delicious!  There are quite a few steps to making them but they are oh so worth it.

Oatmeal Brownies

Oatmeal Batter
1 C. Butter
2 C. Brown Sugar
2 Eggs
2 tsp. Vanilla
2 1/2 C. Flour
1 tsp. Soda
1/2 tsp. Salt
3 C. Oats

Chocolate Filling
1 Can Sweetened Condensed Milk
6 oz Chocolate Chips
6 oz. Peanut Butter
2 T. Butter
1/2 tsp. Salt
2 tsp. Vanilla
1 C. Chopped Nuts (optional)

Cream butter and b. sugar.  Add eggs and vanilla.  Sift flour, soda, and salt.  Add to creamed mixture.  Stir in oats.  Pat 2/3 batter into greased and floured 11x17 pan.  In sauce pan over low heat melt chocolate chips, sweetened condensed milk, peanut butter, butter, and salt.  Add vanilla and nuts.  Pour over crust.  Crumble remaining batter over all.  Bake 350 degrees for 20-25 minutes.
