No Bake Energy Balls

1 cup quick oatmeal
2/3 cup coconut flakes
1/2 cup peanut butter
1/2 cup ground flaxseed
1/2 (or less) cup chocolate chips (any flavor)
1/3 cup honey
1 tsp. vanilla extract

Mix all ingredients together and set in fridge for about 1/2 hour.  Roll into small balls, about 1 inch in size.  Tip: wet hands with water to prevent sticking.  Store in air tight container in fridge.

1 cup chopped pecans
1 tsp cinnamon
1/2 cup peanut butter
1/2 cup honey
1 tsp vanilla
1/4 cup flaxseed

Mix all ingredients together and set in fridge for about 1/2 hour.  Roll into small balls, about 1 inch in size.  Store in air tight container in fridge.
