If you are looking for an AWESOME coffee cake, here it is! I got this recipe from a coworker's wife who was very talented in the kitchen. This makes a great breakfast dish or dessert. It would be great served with coffee or milk. Whenever I bring this places people absolutely LOVE it!
*Note* It is hard to find the Hersheys Cinnamon Chips, not everyone carries them. I have found them at Meijer and County Market.
Cinnamon Chip Coffee Cake
1 Cup Softened Margarine or Butter
1 Cup Sugar
2 Eggs
1/2 tsp Vanilla
3/4 Cup Applesauce
2 1/2 Cups Flour
1 tsp Baking Soda
1/2 tsp Salt
1 2/3 Cups Hersheys Cinnamon Chips (1 whole bag)
1 Cup Chopped Pecans
3/4 Cup Powdered Sugar
1-2 Tbsp Water
Heat oven to 350 degrees. Lightly grease 9x13 pan.
Beat butter and sugar in large bowl until well blended. Beat in eggs and vanilla. Mix in applesauce. Add flour, salt, and baking soda, beating until well blended. Mix in cinnamon chips and pecans. Spread into prepared pan. Bake 30-35 minutes or until it tests done. When cooled, drizzle with glaze made of 3/4 cup of powdered sugar and 1-2 tbsp warm water.
