Loaded Baked Potato Soup

This is a very good cold weather recipe.  I found this in Wes' Mom's recipe boxes, tried it one day and have made it ever since.  Very simple ingredients, yet so flavorful. 

Loaded Baked Potato Soup

8-9 Potatoes (sometimes I use red with skin on, otherwise just your typical baked potatoes, peeled)
1 Onion (diced)
1 tbsp Salt
Pepper to taste
1 Can Evaporated Milk
1/2 Stick Butter
3/4 Cup Milk
3 heaping tbsp Corn Starch

Cut up potatoes and put in large stock pot.  Add onion.  Add water to pot just to cover potatoes.  Cook on high until potatoes are fully cooked.  DO NOT DRAIN WATER.  Continue to heat on medium heat, add evaporated milk, butter, salt, and pepper.  Bring to soft boil and let cook for about 15 minutes.  To thicken combine milk and corn starch.  Add slowly to thicken.

I typically serve with bacon and cheese on top.

  1. Just enjoyed a bowl for lunch! Yum! I also added some celery, green pepper, and carrots. Very good, my 4 year old gave it a thumbs up!
