I thought I should post something for those of us with a sweet tooth. This is the time of the year that I start pulling out all of the family favorites. One of Wes' favorites is his Mom's Apple Cobbler (I think it's actually his Aunt Helen's). It's a little more time consuming because it's completely made from scratch ;) But it's OH SO DELICIOUS!
Apple Cobbler:
Crust -
3 Cups Flour
1 1/2 Cups Crisco
3/4 Cups H20
1 tsp Salt
1 tsp Baking Powder
Mix Crust ingredients together until it forms into a ball of dough. Sometimes I have to add a little extra flour so that it's not so sticky.
15 Apples
1 1/2 Cups Sugar
1/4 Cup Flour
1 tsp Cinnamon
4 Tbsp Butter (cut up into small pieces)
Peel, core, and thinly slice 15 apples. Put in large bowl. Add sugar, flour, cinnamon, and butter. Mix until everything is well coated.
Roll out half of the crust so that it will cover the bottom of a 9x13 pan (spray with non-stick cooking spray). Place crust in baking dish, then add apple mixture. At this point you will be thinking there are way too many apples but there aren't, they will cook down! Roll out the other half of the crust and cover the apples. Tuck the crust into the baking dish. Place a slit on top of the crust. Bake for 1 hour and 15 minutes at 350 degrees.
This is super delicious if served warm with ice cream :)
