Happy New Year's Eve everyone! The kids are napping so I thought I would post some more recipes from over Christmas. These potatoes are delicious. So simple to do yet they look like you really worked hard to make them. We had these with our Christmas dinner at my Mom and Dad's.
Twice Baked Potatoes
8 Baked Potatoes
1 package of Bacon
1 1/2 Red Onions (diced)
2 Cups Sharp Cheddar Cheese
1 1/2 Cups Sour Cream
4 Tbsp Butter
First of all, bake your potatoes in the oven. The same amount of time that you would for a regular baked potato. While they are baking, saute the bacon and onion. I usually use my kitchen scissors to cut the bacon into pieces.(you don't want it diced, you want bigger pieces so you can really taste it) Once the potatoes are done, cut in half and scoop out the centers with a spoon. Mix together the potato, sour cream, and butter. You don't want to mix them a ton, you want them to be thicker. Add in the sauteed bacon and onion. Then add the cheese. Mix well, then put back into potato skins. Put on baking sheet and bake at 375 degrees for another 20 minutes or until outsides of potatoes are golden brown.
