This is one of Wes' favorite meals! It takes a little bit of time to make it but it's not hard at all. My 3 year old son really enjoys it also. I remember when he was 10 or so months old, I would make this for dinner and put it in the blender for him! He loved it :) It's very important to let the pork simmer for 2+ hours, it makes it SO tender.
Chop Suey
1 lb pork (cut up into smaller pieces)
1 Cup flour
Crisco
Salt
Pepper
2 Cups Water
1 Cup Celery
1 Small Onion
28 oz Chop Suey Vegetables
1 Tbsp Soy Sauce
2-4 Tbsp Corn Starch
Dash of Kitchen Bouquet
Put flour, salt, and pepper in a bowl. Roll pork in flour, then brown in Crisco oil. Add water, celery, and onion. Bring to a boil, then simmer on low for 2+ hours. Add chop suey vegetables and soy sauce. Bring to boil, then thicken with corn starch (mix 2-4 tbsp corn starch with about 1/2 cup milk, mix well, stir quickly while adding to mixture) Add a dash of kitchen bouquet. Serve over rice.
