Crispy Cheddar Chicken

New Recipe :) I'm sure most of you have seen that Crispy Cheddar Chicken recipe that has been floating around Pinterest, look's delicious!  Well, I thought i'd give it a try, and it turned it VERY tasty.  Simple ingredients and very easy to do.  With this we had sauteed vegetable medley and baked potatoes.

Crispy Cheddar Chicken

4 Large Boneless skinless chicken breasts (cut into smaller pieces)
2 Sleeves Ritz crackers
1/4 t. Salt
1/8 t. Pepper
1/2 Cup Milk
3 Cups Cheddar Cheese, grated
1 t. dried parsley

Sauce
1 10oz Can Cream of Chicken Soup
2 T Sour Cream
2 T Butter

Cut up your chicken into smaller pieces.  Put your crackers in a ziploc bag and crush.  Put the milk, cheese, and crackers into 3 small dishes.  Add the salt and pepper into the cracker crumbs.  Dip each piece of chicken into the milk, then the cheese (press on with your fingers), then the crackers (press this on firmly).  Spray a 9x13 pan with nonstick spray and lay the chicken in the pan.  Sprinkle the parsley over the chicken.  Cover pan with foil and bake at 400 degrees for 35 minutes, remove foil and bake an additional 10 minutes to crisp up chicken.

While the chicken is cooking, mix together the soup, sour cream, and butter in a saucepan.  Stir until sauce is heated thouroughly.

Serve sauce over chicken.
