This is one of my favorite meals! I found this recipe about 5 years ago in a taste of home magazine. My family loves this one too! It has broccoli and mushrooms in it so it's a meal all in one dish. If you like noodles, creamy sauce, broccoli, and mushrooms then this is a MUST. I won't lie, it take a little bit of time to make but it's totally worth it :)
broccoli chicken lasagna
1/2 pound sliced fresh mushrooms
1 large onion, chopped
1/4 cup butter
1/2 cup all purpose flour
1/2 tsp salt
1/4 tsp pepper
1/8 tsp nutmeg
1 can chicken broth (14 1/2ounces)
1 3/4 cup milk
2/3 cup grated parmesan cheese
1 package (16oz) frozen broccoli, thawed
lasagna noodles
2 cups monterey jack cheese, shredded
2 cups cubed cooked chicken
In a large skillet, saute mushrooms and onion in butter until tender. Stir in the flour, salt, pepper, and nutmeg until blended. Gradually stir in broth and milk. Bring to a boil, cook and stir for 2 minutes or until thickened. Stir in parmesan cheese and broccoli, heat through. Add chicken.
Layer in 9x13 pan, noodles, sauce mixture, cheese, repeat 2 or 3 times. Top with Cheese. Cover and bake 350 degrees for 45-50 minutes. Let stand for 15 minutes before serving.
