These perfect little Ham and Cheese cups are SUPER good :) I have made these tons of times and they can be served multiple ways.....dinner, lunch, appetizer, hot, or cold! They are good no matter how you eat them. I'm actually thinking of taking them to some family reunions this summer. Oh, and my kiddos LOVE them.
Ham and Cheese Cups
2 cups finely shredded cheddar cheese
1/4 pound to 1/2 pound deli ham, chopped
3/4 cups Mayo
1/3 cup real bacon bits (sometimes I use these and sometimes I don't :)
2-3 teaspoons dijon mustard
1 tube refrigerated flaky biscuits
In a large bowl combine the cheese, ham, mayo, bacon, and mustard. Split biscuits in half. Press into bottom and up the sides of greased muffin cups. Fill each with about 2 tbsp cheese mixture. Bake at 450 degrees for 9-11 minutes or until golden brown.
We've even thrown these in the cooler and taken them out on the boat! :)
