Illinois Yeast Rolls

I totally made up the name of these......they are Yeast Rolls but for some of you that know me, you know we have lived in a few different states in the past few years!  SO, I got this recipe from a friend in Illinois, what better to name them than the ILLINOIS YEAST ROLLS :)  It doesn't really matter what you call them, they are SUPER delicious.  This recipe makes about 24-26 rolls (2 9x13 pans).  Believe me, you will want to eat them all.  Ugh.......they are just so stinkin' good.  We usually buy special rolls for the holidays from a special bakery but I think these are going to take over :)

They aren't hard to make, they just take some time because you have to wait for them to rise twice.

Illinois Yeast Rolls

4 cups warm water - divided
1 tsp salt
1 stick butter, softened
1 1/2-2 1/2 cups sugar - divided
2 pkg yeast
7-8 cups flour

Mix 2 cups warm water, yeast, and 1/2 cup of sugar in small bowl.  Let stand until foamy (about 10 mins).   In large bowl mix 2 cups very warm water, stick of butter, salt, and 1-2 cups sugar (I use 1-1 1/2 depending on how sweet you want them) until sugar dissolves.  Add yeast mixture and 2 cups flour, mix until smooth.  Add 2-3 cups flour and mix again until blended.  Continue to add flour until dough leaves sides of bowl.  Turn out and kneed, adding flour as needed till dough is smooth and no longer sticky.  Place in large bowl (spray with non stick cooking spray) and cover with damp towel.  Allow to rise until double (about 2-3 hours).  Punch down and form into loaves or rolls.  Place in 2 9x13 baking dishes (sprayed with non stick cooking spray) if making rolls.  Let rise again until double in size (about 1-2 hours)  Bake at 350 degrees for 28 minutes.  Remove from oven and brush with melted butter.
