Corned Beef Casserole

This is an old recipe! My Mom use to make this for us when we were kids, we loved it then and it's just as good now. I made it a few months ago (before the blog), the original recipe calls for raw onion, but Brayden wasn't a huge fan. Now, if you asked my Mom she would say the raw onion is what makes it :) Tonight I sauteed my onions for like 5 minutes, not long at all, just enough to change the texture and flavor. So you choose which you would like to do, but if you have kids that don't like onions, I highly recommend sauteing them first (not for long, just 5 minutes or so). This only takes minutes to throw together! Corned Beef Casserole 8oz pkg. wide noodles 12oz Corned Beef 1/4lb. American Cheese, diced 1/2 Cup Chopped Onion (raw or sauteed) 1 Can Cream of Celery Soup 1 Cup Milk 1 sm Sour Cream 3/4 Cup Buttered Crumbs (Ritz, moistened with butter) Combine cooked noodles, corned beef, cheese, onion, soup, and milk. Enchiladas (beef)

Mexican Night! My family LOVES these enchiladas, I make them quite often. They are so easy to make. I also make chicken enchiladas, they are just as delicious. Sometimes I make these ahead of time, don't put the sauce on them, and they can sit in the fridge until you bake them. Enchiladas (beef) 8 Medium Tortilla Shells 1lb Ground Beef 1 Can Refried Beans 1 Can Red Enchilada Sauce 1/2 Onion, diced 1/2 Orange or Yellow Pepper, diced 1 Packet Taco Seasoning 1 Can Corn, drained 8oz Cheddar cheese Brown ground beef, add onion and pepper, cook till soft. Add taco seasoning, refried beans, and corn. Add 1/4 to 2/3 cup of enchilada sauce. Add 3/4 Cup cheese. Mix together. Put meat mixture into shells. Lay in 9x13 pan (sprayed with non stick spray). When ready to bake spread the remaining enchilada sauce over top and sprinkle cheese over the top. Bake 375 degrees for 30 minutes. Enjoy!

Super EASY Shredded Beef Wet Burritos

These shredded beef wet burritos are SUPER yummy! This is a simple meal that you can throw in the crockpot before you head out the door, then you'll just have to assemble them when it's time to eat. Or, you can simmer the meat on the stove. I've done it both ways and they were delicious both ways :) Once again my children LOVED this, Brayden even asked to have more for his bedtime snack :) Super EASY Shredded Beef Wet Burritos 2lbs of beef stew meat 1 large can enchilada sauce (mild, medium, or hot) 19oz 2 beef bouillon cubes 1 can refried beans 5-7 burrito size tortillas 1 cup of cheese (shredded cheddar or colby jack) Fast fry the meat. For those that don't know what this means, heat up a pan, fairly hot, with oil. Add meat to brown, for only about 5-8 minutes. You only want to brown it, you're not trying to cook it.
