PALEO Sweet Potato Hash
We have been eating Paleo for about 2 weeks now. It's fun coming up with all these new recipes and trying new ones from Pinterest. I cook everyday and this one is by far the BEST! I kinda just threw this together so feel free to add more vegetable or make substitutions.
PALEO Sweet Potato Hash
5-6 Peeled and Diced Sweet Potato's
1 Cup of diced Onion
1 package of Bacon
2 Zucchini's diced
1 Yellow Zucchini Diced
1/2 Red Pepper Diced
1/2 Yellow Pepper Diced
10 Mushrooms diced
6 eggs
Preheat oven to 400 degrees. In large oven safe pan fry bacon (cut into bite size pieces). Once bacon is almost done add the onion. Cook for about 5-10 minutes. Drain a little bit of grease, but save incase it needs it once you start adding potato's. Add potatoes and vegetables. Cook on high for about 10 minutes with lid, stirring occasionally. Once everything is tender, make 6 nests in the hash. Add eggs, out in oven for 5-10 minutes depending on how done you want your eggs. Enjoy! My kids loved it and the hubby and I had it for breakfast the next day.
