Goulash
This is the perfect fall meal :) This makes quite a bit of food so it's perfect for when you're having company, Halloween get-togethers, or just your family! I remember my Mom and Aunts making this when I was a kid, it seems like everyone has a Goulash recipe in their family. This recipe actually came from my husbands Mom, we all really enjoy it!I served it with my Corn Casserole.
Let me know what you think! Enjoy!
Ingredients
1 1/2 lbs. Hamburger
3/4 of a 2lb box of Elbow Noodles
3/4 Cup Finely Chopped Onion
28oz Can of Stewed Tomatoes + 8oz Can of Stewed Tomatoes
1 Can of Tomato Soup
1 Large Can of Tomato Juice
1 Can Kidney Beans
3 Tbsp Sugar
Salt & Pepper
Start Boiling water to cook your noodles. Elbow noodles typically cook in 9-11 minutes, only cook them for 9 (or the least amount of time) because they are going to simmer with the other ingredients so you don't want them to turn to mush :) While the noodles are cooking, cook up your hamburger, add the onions towards the end. Cook until the onions start to soften a bit. To the meat and onion mixture add the stewed tomatoes, soup, and kidney beans. Mix together. Make sure noodles are drained completely then put back in large pot. To the noodles add the meat mixture. Add the tomato juice, sugar, and salt & pepper.
Let this simmer (on low) on the stove for at least 45 minutes, or until most of the liquid is absorbed.
